Comfort and sharp elegance in one bite. Seared Japanese Wagyu, Parmesan, shiitake & soy sesame rice croquette, miso aïoli, tsume & kizami wasabi.

Kurutta Shake Carpaccio
A Christmas plate disguised as Japanese art. Salmon, white soy yuzu ponzu, marinated trout roe, lime dressing, cress, yuzu kosho & shiso.

Campari, yuzushu, sour cherry, bramble cordial and ginger ale, dressed with cotton candy.
